Many changes apparently as can be seen in my machine where lots of components are 'dotted' which means they are changed from spec at the factory. Rather than having been changed at the factory, this more likely indicates they have been replaced in a service sometime in the last 45 years since it was built, and that technician made the decision to change the part.
It is not uncommon to up the voltage in and even the uF rating in a refurbishment or repair. All that being said, you are right that often what is in the service manual does NOT match what is in the receiver, and it is good to always confirm by looking at the actual components you are replacing.
